This event is based on Motion NM036-24, proposed by Councillor Ben Wang and passed by the Georges River Council, aiming to establish night markets in Hurstville to boost the local economy.
The night market is hosted by the George River Association and co-organized by well-known local businesses such as Taste of Shende, and Café De Haus.
Requirements for All Stalls
Stall Size: 3M X 3M. We don’t accept food trucks or vans.
Stall rubbish must be taken away. Please contact us if you need help.
Stallholders shall bring their own tent, LED lighting （The brighter the LED lighting, the better. Here is a sample one）, a minimum 25-meter power cord, and a power board. Please place the power board inside the tent in a location that is protected from rain. Please label your power cords and power boards with your stall name to avoid mistaking them. The organizer's power cords and power boards will be collected after the stall owner leaves, so please be careful not to take them away by mistake.
Stall owners are required to prepare 4 sandbags / weights, and ropes to stabilize the tent. Please tie the tent legs of adjacent tents together. The sandbags / weights and ropes are also required for the stall owners who rent the tents.
The organizer will provide one power outlet per stall. Stallholders with equipment above 1 kilowatt or needing additional outlets must notify in advance to avoid power outages due to high-power appliances. Please list the power requirements for each equipment.
Do not damage any council property.
Requirements for Food Stalls
Must use gas or self-provided generator.
Food stalls are requested to bring their own 3m x 3m floor mats to prevent food grease from dirtying the floor.
All food stalls must have functioning hand wash stations with warm water, soap, and single use paper towels. These must be ready for use prior to any food preparation and maintained throughout operations.
All food stalls must ensure cold food is be stored at 5°C or below by using refrigeration or providing an adequate supply of ice.
All food stalls must have and use a commercial food grade sanitiser that is suitable for food surfaces.
Sneeze guards to be provided where food is displayed and accessible to customers.
Stall layouts to be designed to allow safe access for inspections and eliminate trip hazards. This includes allowing sufficient space behind stalls, providing anti trip cable covers to any cords on the ground.
Time: 2:30 PM - 9:30 PM
Location: Hurstville Plaza
The night market starts at 2 PM and the performance begins at 3 PM. The earliest entry time is 11:30 am. Vehicles must leave the plaza by 2:30 PM. Stalls must be set up by 2:30 PM. The exit time is from 9:30 PM to 11:00 PM. Please enter according to the scheduled entry time to avoid inconvenience to management and other stall owners.
If you arrive more than 15 minutes beyond the scheduled entry time, you may be refused entry into the Hurstville plaza. In such cases, you may need to unload at the nearby Hurstville Westfield Shopping Center and transport goods to the plaza.
Please complete unloading within 20 minutes. You may be required to pay an additional fee of up to 50 AUD if it takes longer.
Please unload goods at different locations based on your stall position shown on the Market Stalls Layout:
Stalls in Zone C will unload their goods next to the footbridge on the Crofts Avenue side;
Stalls P1-P3 will unload their goods in the middle of the plaza near P1;
Stalls P5-P8 will unload their goods in the middle of the plaza near P5.
The following stalls will unload their goods at their own stalls:
Stalls in Zone D will unload their goods at their own stalls;
Stalls P4 and P9 will unload their goods at their own stalls;
Stalls in Zone M will unload their goods at their own stalls;
Stalls in Zone F will unload their goods at their own stalls.
Stall Price and Selection Fees
There are 26 stalls in total at the night market. A selection fee is required if you want to select a stall in advance.
Stall Price: 188 AUD
The stalls are assigned by the organiser, and stall locations are not fixed and will be notified upon entry on the day. If you decide to pay more to choose a location in advance, please inform us of your stall choices after payment.
Stall Selection Fee: 100 AUD
When a 100 AUD Stall Selection Fee is added to the stall fee, the stall owner can select the stall in advance.
Stall Frist Choice Fee: 488 AUD
When a 300 AUD is added to the stall fee, the stall owner can select the stall in advance and be the first to select the stall, and has the opportunity to speak on stage for two minutes. Only 1 stall owner is set up to be able to be the first to select the stall.
Stall owners can provide lucky draw opportunities as sponsors in the show.
Stall owners’ logos are displayed in all promotional materials of the night market, including posters.
All stallholder agreements with the Georges River Association (GRA) are based on individual night market events, each requiring separate approval from Georges River Council. Payments are accepted only for confirmed events, with no rights or guarantees extended to future dates. Stallholders are informed that approvals are assessed on a case-by-case basis, and any fees paid are refundable if an event is not permitted by the Council.
Stall owners shall bring their own tents (,here is a tent for reference) and walls (, here is a wall for reference). If they need us to provide tent and walls, the rental fee is 50AUD for food stalls and 30AUD for non-food stalls, 20 AUD for a table and a stool, and 10 AUD for lighting. Stall owners are required to prepare 4 sandbags / weights, and ropes to stabilize the tent, this also applies to the rented tent. Please include the equipment rent fee when you pay the stall fee and email us the equipment you need to rent from us.
Food stalls must use gas or self-provided generator in principle. It is easy to lose power when high-power catering equipment is used at the same time. We will make overall arrangements to avoid power outages. The stall fee includes electricity for lighting.
For stalls with power supply above 1 kW and within 2 kW, a surcharge of 50 AUD is required;
For stalls with power supply above 2 kW and within 4 kW, a surcharge of 100 AUD is required;
In principle, stalls with power supply above 4 kW are not accepted
Please include the electricity surcharge when paying stall fee and email us any additional cable etc you require from us.

The sponsor's logo will be displayed prominently at the event, such as on roll-up banners, stage backdrops, flags on both sides of the stage, and booth signs. The sponsor will bear the cost of producing the advertisement materials.

One prime stall location for product display or sales.
Naming rights for the event.

How to Participate and Apply
Please email organizer at dragoneightevents@gmail.com, along with the required documents. If the public liability insurance, FSS and TFP have already been sent there is no need to resent unless there are changes.
(1) All stalls need to fill in the stall application form and provide company public liability insurance.
(2) Food stalls: Provide Food Safety Supervisor (FSS) certification and Temporary Food Permit (TFP).
(3) Non-food stalls: Submit a complete product list with quality inspection information.
We will announce the coming night market and email all the stallholders who have registered with us by filling the Application form.
Stallholders reply to the announcement email by indicating whether they are going to participate.
All stallholder applications are reviewed individually based on product variety, electricity usage, product smell, cooperation with us and overall event balance.
Approval emails with designated account for payment are issued once the application is accepted.
After receiving formal approval email should stallholders proceed with payment.
The night market is held on Saturdays. If you wish to cancel your booth, please notify us by email at 5pm on Monday of that week. Stalls cannot be cancelled after this time and the bond will not be refunded.
Once your stall application is approved, please pay a 200 AUD bond to secure your stall. The bond is a one-time payment and can be used in subsequent night markets. If you no longer participate in the subsequent night markets, please email us to get the bond refund.
